Each week, I will explore a different type of cheese based on its distinct texture. My cheeses will include (from soft to hard) mozzarella, goat cheese, cheddar, and parmesan – among others.
My research question is: How do different textures of cheese create a unique tasting experience? I hypothesize that softer cheeses will be more popular because they feel creamier/smoother in the mouth.
Each taster will be asked to plug his/her nose during the tasting so as to control for texture. Here are the questions I will ask all my tasters:
- Rate the cheese on a scale of 0-10 (dislike=0, like=10)
- What do you specifically like about this cheese? What do you dislike about it?
- How does the cheese make you feel emotionally and physically?
- Describe in a couple of words how the cheese feels in your mouth.
- Do you like the color of the cheese? (rate 0-10)
- Do you like its texture? (rate 0-10)
